There’s a philosophy in France that is near and dear to our hearts: if a farmer worked hard to raise an animal well, every part of it should be used. The way the French cut meat is more than butchery—it’s craft and care and a way of life.

Here in the United States, we have some of the leading cattle breeders in the world while France arguably produces the finest butchers on Earth. At Moriarty’s we strive to combine the best of both worlds, combining exceptionally raised meat with butchering techniques that revere the whole animal. Rather than focusing on speed and efficiency, we hold ourselves to the highest French standards, cutting every piece with hand saws and cleavers. By exposing every muscle and cutting each one to achieve a specific taste and consistent texture, we use about 95% of an animal–including bones and fat—rather than the 65% gleaned from the industry standard. Best of all, we create delicious, nourishing food that respects the land as well as the animals and the individuals who raise and eat them.

We offer more than 33 cuts of beef, 11 cuts of lamb, and 15 cuts of pork. That’s a lot to learn and remember, but that’s why we’re here. Nothing delights us more than sharing knowledge and camaraderie with our patrons and you can rely on our expertise to walk you through the best ways to enjoy each and every cut.

When you order a piece of meat at our shop, we’ll ask you how you plan to prepare it and discuss how much you need per person. We’ll do all the prep work, slicing off skin and fat, trimming around the bone, and cutting it to the size you want. And we’ll share our thoughts on the best way to cook it. Not sure exactly what you want or need? That’s OK. We’ll chat about what you know you like or think you might want to try, we’ll take a look at any recipes you may have, and we’ll ensure you get the right cuts in the right size along with the direction you need to obtain stellar results.
