Lamb is Tom's favorite meat to cut and to eat! Contrary to what you see in most stores, there is much more to lamb than racks and legs. Watch as Tom or Andy breaks down a whole lamb into its case ready cuts and learn the best culinary destination for each one. This is also a great experience for anyone who wants to process their own deer, as the anatomy, size and end cuts of lamb and deer are very similar.
Breakdown event tickets include a demonstration and a degustación. A degustación is a Spanish-style food presentation with a variety of preparations to sample and share. For our events, these will be meat centered and tailored to the breakdown content.
DEMONSTRATIONS WILL ONLY RUN WITH A MINIMUM OF 8 PEOPLE. We will notify you the Friday before the demonstration if we need to cancel the event due to low enrollment.
If your plans change after you book, you may request to cancel your ticket for a full refund up to one week before the date of the event (i.e., Tuesday June 14th 11:59pm).
