Service Description

Opening day for deer season is around the corner and we have a workshop for hunters looking to improve their butchering skills! This event combines a lamb breakdown demonstration with a hands-on element using beef top sirloin. The lamb breakdown will set the tone by reviewing deer anatomy-- lamb and deer have the same anatomy at roughly the same size. Tom will also show you how to channel bone and cut boneless leg of lamb steaks, which is a great method for venison leg steaks. Finally, you'll work on your own beef top sirloin to practice the fundamentals and learn some butcher's tricks for properly peeling and trimming silver skin in order to yield the most from your venison. Each participant will take home ~3-5lbs of beef top sirloin. WORKSHOPS WILL ONLY RUN WITH A MINIMUM OF 4 PEOPLE. We will notify you the Friday before the workshop if we need to cancel the event due to low enrollment. If your plans change after you book, you may request to cancel your ticket for a full refund up to one week before the date of the event (i.e., Monday November 8 11:59pm).
