Service Description

This workshop showcases the French custom of seaming out individual muscles. Easy to overlook when it is not treated this way, the beef shoulder is an underappreciated group of primal muscles that yeilds a versatile array of cuts. Learn the details of all eight constitutent muscles, including the teres major and sorprise, which are suitable for high heat applications such as grilling and pan frying, and the mouvant and shank, which are better for slower preparations like braising and stewing. Few of the cuts from the beef shoulder ever appear in typical American butcher shops, who generally use them for grind. Breakdown event tickets include a demonstration and a degustación. A degustación is a Spanish-style food presentation with a variety of preparations to sample and share. For our events, these will be meat centered and tailored to the breakdown content. DEMONSTRATIONS WILL ONLY RUN WITH A MINIMUM OF 8 PEOPLE. We will notify you the Friday before the demonstration if we need to cancel the event due to low enrollment. If your plans change after you book, you may request to cancel your ticket for a full refund up to one week before the date of the event (i.e., Monday August 9th 11:59pm).
